about your AC/heater, maybe it's a loose fuse, check fuse #4, 14 and 20, just give them a firm push in.

Yes, that's exactly how it's suppose to work. As they alluded to above, there's two ways to go from auto to manual.
1. move the shifter from auto to manual (and back)

Thats how it is... Hold the right paddle for a few seconds, and your back in auto...
That's the way it's supposed to be.
Using the paddles is a manual mode... hence you have put the smart into manual.
